Sweet potatoes are a nutritious and inexpensive way to make a great meal, and yet to still know that you are eating something really good for you.

 

Mashed Sweet Potato Recipe
For a small gathering of 8, please see to it that you have,

Now transfer this into the serving dish. Smoothen the top and then make swirls on top with a fork. Finally, sprinkle some walnuts and the sugar on top and serve it with any meat preparation. Relish it as each person will consume only .62 gms of fat, 17.25 calories and will get the benefits of approximately 23.5% of the DV requirement of vitamin A! Sweet Potato Mash with Stewed Chicken
Know those days when you feel like cooking nothing and yet your stomach and tongue both demand something delectable? Well you can make this for a cozy twosome with just,

  • Sweet potatoes 4 (skinned and quartered)
  • Chicken breast fillets 4 (stewed and sliced)
  • Garlic cloves 2 (large and minced)
  • Peas 1 bowlful (boiled)
  • Cilantro 4 tsp (chopped crudely)
  • Cumin powder a dash

Procedure
Simply, boil the sweet potatoes in salty water, until they soften, for about 15 minutes. Drain the water and mash the potatoes gradually adding the cumin, garlic and coriander. Place this onto the serving dish in a circular shape. Arrange the peas around the mound of the mash and then make a bed on the mound with the backside of a small bowl. In this depression arrange the chicken and voila! You’re dinner is ready and nutritious as well!

Sweet Potato Strips
Now this preparation is time consuming alright but its all baked and therefore healthy and lip smacking! Just gather,

  • Sweet potatoes 3 (cut into French fry strips)
  • Cayenne pepper ¼ tsp.
  • Canola oil 1 tbsp.
  • Taco seasoning 1 ½ tbsp.

Procedure
In a transparent plastic bag put the strips in and then throw in the oil, seasoning and pepper. Now shake the fries vehemently enough to mingle everything well. Preheat the microwave to 220° C. Now take one sheet of baking paper and uniformly spread out the fries on it. Place this inside the oven and bake for approximately 15-20 minutes. Take the sheet out after that and turn the strips over. Return it to the oven and bake for another 10 minutes. Take out the crispy and slightly brown fries and serve with a tangy dip. Believe me, this preparation of
has 0% cholesterol and only 85 calories.

Sweet Potato Bread Recipe # 1
This is a basic recipe, which can be used to make the bread. If you use baked sweet potatoes to make the bread, your bread will be much better in taste. However, the boiled potato bread does not taste bad either.
Ingredients

  • Regular Flour 3 cups
  • Baking Soda 1 teaspoon
  • Salt 1 teaspoon
  • Cinnamon 3 teaspoons
  • Sugar 2 cups
  • Sweet Potato (boiled and mashed)
  • Nuts (chopped) ½ cup
  • Eggs 4
  • Vegetable Oil 1 ¼ cup

Method

  • Mix flour, soda, salt, cinnamon, sugar, sweet potatoes and nuts in a large bowl.
  • Beat the eggs well, till they are fluffy.
  • Mix the eggs with the oil and pour this egg-oil mixture in the flour.
  • Mix the batter, till the batter is soft, even and moist to touch. Make sure you do not over-mix the batter, else the bread will become very hard.
  • Grease loaf pans and pour equal amount of batter in both the pans.
  • Bake at 350 degrees Fahrenheit for about an hour to an hour and ten minutes.

Sweet Potato Bread Recipe # 2
This is a pecan sweet potato bread recipe. It is a very common recipe used in the south. With this recipe, you will make light, spicy bread, which every one will enjoy. To make the sweet potato flesh, you can either roast the sweet potato or boil them.
Ingredients

  • All Purpose Flour 1 ½ cups
  • Kosher Salt 2 teaspoons
  • Baking Soda 1 teaspoon
  • Baking Powder ½ teaspoon
  • Ground Cinnamon ½ teaspoon
  • Freshly Ground Nutmeg ½ teaspoon
  • Sweet Potato Flesh 1 cup
  • Granulated Sugar 2/3 cup
  • Light Brown Sugar ? cup
  • Unsalted Butter (melted) 8 tablespoons
  • Eggs 2
  • Vanilla Extract 1 teaspoon
  • Whole Milk ½ cup
  • Whole Pecans (toasted and coarsely chopped) ½ cup

Method

  • Heat the oven to 350 degrees Fahrenheit and coat the loaf pan with butter and flour. In case there is any excess, tap it out.
  • In a big bowl combine flour, salt, baking soda, baking powder, cinnamon and nutmeg. If there are any lumps break them.
  • In a blender, blend together sweet potato flesh, granulated sugar and brown sugar at a medium speed, till all the ingredients are well mixed.
  • Then add butter and whisk it on low speed.
  • After the butter add one egg at a time and whisk on low till the eggs become one with the other ingredients.
  • Scrap the sides of the blender and add ½ the quantity of the dry mixture and ¼ cup of milk. Whisk it on low speed. Then add the remaining flour and milk.
  • Remove from the blender and fold in the nuts.
  • Pour the batter in the pan and bake until the cake is ready. It will take about an hour for the cake to bake.
  • Let the pan cool for 15 minutes before you remove the cake.

The late eighteenth century saw the beginning of the popularity of the sweet potato, and the start of many sweet potato recipes. In the early days it was thought to be a great alternative to the yam. For whatever reason, the sweet potato caught on and before long cooks everywhere were creating dishes fit for a king. Because this lovely tuber was so sweet, it was suitable for pies and desserts alike which further added to it’s popularity, and what better way to start out but with some pie recipes for you to try.

 

Sweet Potato Pie
Here is an easy recipe for sweet potato pie.


Ingredients:

  • A 9-inch unbaked pastry shell.
  • Sweet potatoes, mashed and cook 3 cups.
  • Butter ¼ cup.
  • Sugar 1 ¼ cups.
  • Large eggs 2.
  • Evaporated milk ¼ cup.
  • Nutmeg 1 teaspoon.
  • Cinnamon 1 ½ teaspoons.

Preparation:

  • Take the sweet potatoes and butter in a large mixing bowl and blend well.
  • To this add the sugar and eggs. blend with a blender on low speed till it is smooth.
  • To this add milk and spices and bled well.
  • Pour this mixture into a pastry lined pie shell.
  • Bake at 350 degrees for 50 minutes.

Sweet Potato Pie
This is another recipe of a sweet potato pie but uses pecans.


Ingredients:

  • A pastry lined pie shell.
  • Sweet potatoes, cooked and peeled – 2 cups.
  • Unsalted butter ½ cup.
  • Light brown sugar ½ packed cup.
  • Large eggs, beaten slightly 2.
  • Vanilla extract 1 teaspoon.
  • Ground cinnamon 1 teaspoon.
  • Ground ginger 1 teaspoon.
  • Ground nutmeg ½ teaspoon.
  • Salt ¼ teaspoon.
  • Orange juice, brandy or bourbon 2 tablespoons.
  • Dark corn syrup ½ cup.
  • Pecans halved 1 cup.

Preparation:

  • Take the pie crust and using a fork make a few holes in it. Bake this in a preheated oven at 425 degrees for 12 minutes and set it aside.
  • Mash the sweet potatoes with a quarter cup of butter. Let it cool and then add heavy cream, brown sugar, eggs, vanilla, spices and the brandy, bourbon or orange juice according to your preference.
  • Mix the other quarter cup of butter to the corn syrup and pecans. Pour this evenly on top on the pie. Add all of this to the pie crust and put it in the oven at the same settings for 25 minutes.
  • Serve with whipped cream or vanilla ice cream.

Mississippi Sweet Potato Pie
This one’s call the Mississippi sweet potato pie and is quite a favorite among sweet potato lovers.


Ingredients:

  • Butter that has been softened 4 ounces.
  • Cooked and mashed sweet potatoes 2 cups.
  • Granulated sugar 2 cups.
  • Evaporated milk 1 small can of 5 ounces.
  • Vanilla 1 teaspoon.
  • Eggs that have been beaten 3.
  • Cinnamon 1 ½ teaspoons.
  • Unbaked pie shells 2.

Preparation:

  • Mix the butter, mashed sweet potatoes, sugar and evaporated milk and make sure it is well blended.
  • Add vanilla, eggs and cinnamon to this and mix very well.
  • Pour all this into the pie shells.
  • Bake these at 350 degrees in the oven for 1 hour till it is well cooked.

Sweet Potato Pie with Marshmallow Meringue Topping


Ingredients:

  • Crushed graham crackers 1 ½ cups.
  • White sugar 1/3 cup.
  • Butter melted 5 tablespoons.
  • Salt ½ teaspoon.
  • Canned sweet potatoes, mashed 1 ½ cup.
  • Brown sugar 1 packed cup.
  • Whipping cream 1 cup.
  • Vanilla extract 1 ½ teaspoon.
  • Large eggs 3.
  • Ground cinnamon ¾ cup.
  • Ground mace ¼ cup.
  • Salt ¼ teaspoon.
  • Miniature marshmallows 2 cups.
  • Milk 1 tablespoon.
  • Egg whites 2.
  • White sugar ¼ cup.

Preparation:

  • Set the oven to 325 degrees Fahrenheit and let it preheat.
  • Take the crushed graham crackers, 1/3 cup white sugar, butter and 1/8 teaspoon of salt and mix it in a mixing bowl. Spread this mixture at the bottom of the pie pan.
  • Let the graham cracker bake in a preheated oven for 5 minutes till it is golden brown. Remove this and let is cool on a rack.
  • Preheat the oven again at 400 degrees Fahrenheit.
  • For the pie filling, take the sweet potato that have been mashed in a mixing bowl. To this add the brown sugar, whipping cream, eggs, vanilla, cinnamon, mace and salt and whisk it till it is smooth and blended.
  • Pour this mixture in the crust.
  • Bake the pie in the preheated oven till it is set, for 45 to 50 minutes. Remove the pie from oven and let it cool.
  • For the marshmallow meringue topping, take the marshmallows and milk and put them in a pan. Cook on low heat and stir till the marshmallows are melted. Keep doing this till the mixture is fluffy.
  • Take the eggs white in a different mixing bowl, and beat till it is soft and fluffy. Slowly add the ¼ cup white sugar and keep beating. Add the vanilla and salt and add this mixture to the marshmallow mixture and spread this over the pie.
  • Put the pie back again in the oven and bake for 5 to 10 minutes till it is golden and toasty.

Flour (1/3 cup)
Brown sugar (1 cup)
Flaked coconut (1 cup)
Chopped pecans (1 cup)

Preparation:
Make a combination of all the main ingredients until it smoothens. Then add all the ingredients for the toppings and spread it over the earlier mixture. Bake this preparation at 350 degrees for around 40 minutes.

Ingredients
Sweet potatoes (3 cups mashed)
Sugar (1/2 cup)
Salt (1/2 teaspoon)
Large eggs (2)
Milk (1/2 cup)
Vanilla (1/2 teaspoon)
Melted butter (4 tablespoons)

Ingredients for Toppings:
Brown sugar (1/2 cup)
All-purpose flour (1/2 cup)
4 tablespoons melted butter (1/2 cup)
Chopped pecans (1/2 cup)

Preparation:
Cut the sweet potatoes in half and boil them well till they turn tender. Let the jackets of the potatoes remain on the potatoes when they are being boiled. Once done, let it cool down and peel off the jackets. Mash these sweet potatoes well and add some sugar and salt as per taste. Then, mix the vanilla; milk, eggs and the melted butter together. Then, add the mashed potatoes to this mixture. Blend it will till it smoothen s. Now, you will need to spoon this mixture into a baking dish that has been lightly buttered beforehand. You can then combine remaining ingredients and sprinkle them generously over the sweet potato. Bake this preparation at 350 degrees F for a period of 40 minutes. Enjoy this easy sweet potato casserole recipe while hot!

Ingredients for the Casserole
Mashed sweet potatoes (3 cups)
Lightly beaten (2 egg)
Sugar (1/2 cup)
Salt (1/2 teaspoon)
Melted butter (1/4 cup)
Cream / milk (1/4 cup)
Vanilla extract (1 1/2 teaspoons)

For the Topping:
Brown sugar (1/2 cup)
Flour (1/3 cup)
Chopped walnut (1/2 cup)
Chopped pecan (1/2 cup)
Melted butter (3 tablespoons)
Mini marshmallows (1 cup)

Preparation:
You would need to begin with mixing all the casserole ingredients together till they blend well. Then, spread this mixture into a buttered casserole dish. Now, carefully mix together all the ingredients for the toppings together. Do not mix the marshmallows as yet. Sprinkle this all over the casserole.

Now, you would need to bake this preparation in an oven at 350 degrees for around 30 minutes. Bake it uncovered. Remove from oven. When the marshmallows are to be added, you need to place them on the casserole and bake the entire dish for an additional 6 minutes till the marshmallows melt.

Sweet Potato Casserole Recipe with Pecan:


Ingredients for the Casserole
:
4 cups mashed sweet potatoes
1 ¼ cup white sugar
3 eggs, beaten
1/2 cup milk
1 teaspoon vanilla extract
½ cup butter, melted
½ cup dark rum

For the Topping:
1 cup brown sugar
1 cup chopped pecans
2 tbsp melted butter
½ cup self-rising flour

Preparation:

Keep the oven preheated at about 175 degrees C and a greased 12 inch baking dish ready.
In a large bowl, mix the sweet potatoes and sugar, add the eggs beaten, gradually, stirring all the while. Then add in the milk, vanilla extract, and ½ cup melted butter. Blend in the rum, stirring gently. Pour the mixture into the prepared baking dish.

In another bowl, mix together the brown sugar, pecans, flour, and 2 tbsp melted butter.

Spoon this mixture over the mashed sweet potato batter. Bake for 30 minutes in the preheated oven, till the top is a warm golden. Cool for at least ten minutes before serving.

The pecans can be substituted with hazelnuts also. Another interesting variation could be the addition of chopped hard fruits like pears or apples to the nut mixture, this will add to make the casserole slightly juicier and also add to the flavor. Sweet potatoes have a sickly sweet flavor so fruits could be a good accompaniment.

This is pretty uh… yeah. But it’s a roasted sweet potato. When it gets chilly, vendors set up and roast them and sell them for you to enjoy plain. They were sweet and fairly moist but wow it was a lot of sweet potato to eat all by yourself.

Okinawan Sweet Potato Recipe!

Okinawan Sweet Potato and Haupia Pie

(Haupia is a coconut milk-based Hawaiin dessert.)

This recipe utilizes sweet potatoes found in Okinawa, Japan. Okinawan sweet potatoes, when cooked, develop a purple flesh and a delicate taste.

You can find Okinawan sweet potatoes at Asian groceries (or in Okinawa, har har), and be sure to ask an employee if you can’t find one!
